For one, the central version doesn't have turmeric powder in the flour mixture - only eggs. As a result, the amount of egg yolk used determines whether Banh Xeo is more white or yellow. Moreover, locals in various Central regions typically wrap Banh Xeo in moist rice paper in addition to veggies.
